Healthy Spaghetti Squash Lasagna

Description: Try this Healthy Spaghetti Squash Lasagna! It’s a lighter twist on the classic comfort food—using roasted spaghetti squash in place of pasta, lean ground beef for satisfying protein, and layered with creamy farmer’s cheese, melty part-skim mozzarella, and a rich marinara sauce.

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Slice spaghetti squash in half, remove seeds, and roast cut-side down on a baking sheet for 35–40 minutes. Scrape out strands and set aside.
  3. In a pan, cook ground beef in olive oil until browned. Season with salt, pepper, and optional herbs.
  4. In a baking dish, layer spaghetti squash, marinara sauce, cooked beef, farmer’s cheese, and mozzarella.
  5. Repeat layers as desired and finish with a layer of cheese on top.
  6. Bake uncovered for 20–25 minutes until the top is melted and bubbly.
  7. Let rest for 5 minutes before serving.
